4 cups honeydew melon, peeled, scooped and cut into cubes
2 cups water
4 sprigs basil
2 sprigs tarragon
juice and zest of 2 limes
2 tablespoons of  birch sugar, stevia or agave syrup
a pinch of salt

I have not yet met a better thirst quencher than agua fresca. Tthis refreshing, delicious „water”; not overly sweet, with slightly anise flavor with replenish the water like in an instant.  What a treat!


We prepare the agua fresca in two parts. Divide the ingredients in half, put them in a blender and whizz until  the ingredients are mixed well and achieve slushy state. Scrape out from the blender into a strainer and strain pushing lightly on the solids to extract the liquid. Discard the solids. Repeat with the other half of the ingredients. Pour the water into the jar, add ice cubes and serve.
