16 small apples
½ cup of ground almonds or amaretti cookies, 3 per apple
good quality olive oil, preferably with floral notes
What do we start Fall season with? It is an easy apple dessert. My friend prepared a delicious apple dessert the other day: crumbly and buttery crust on the bottom, whole apples and meringue on top. It was delicious! I have to make it my way I decided. What I was planning: buttery and salty sable Breton on the bottom, whole apples and almond frangipane on top. I could not wait to make it. however, what did I end up with?
Well, these apples baked in olive oil. And it was not that I was lazy, rather due to my plan to simplify the dessert, Besides, ever since I have started baking the fruit in olive oil, I became a convert. In summer I was baking pluots and peaches in olive oil with herbs, salt and honey. Just as I put the apples with amaretti and cinnamon in the oven, I remembered the olive oil. So I poured the glug of olive oil over the apples and it turned out to be a very good idea! Perfection!
Wash and peel the apples. Place the apples in water acidulated with lemon juice. Remove the pips and keep the stems. Stuff the cavity with ground almonds or crushed amaretti cookies. Place the apples upright in a baking dish lined with a baking paper. Sprinkle the apples with cinnamon and crushed amaretti or ground almonds. Pour a good glog of olive oil over the apples. Bake the apples in the oven heated to 350 defrees F (180C) for 35-45 minutes, basting with the juices and olive oil, until the apples are brown and baked thru.
