1 cup vinegar
2 tablespoons dried
chamomile flowers (in summer use ½ cup fresh flowers)
1 cup apple cider vinegar
We all know health benefits of apple cider vinegar. In this vinegar I combined apple cider vinegar with dried chamomile flowers. Chamomile, not only provides healthy benefits but also lends additional flowery flavor. It will make perfect addition to spring and summer vinaigrettes.
Put the chamomile flowers in a bottle or a jar. Twist the top and shake well. Put in the shady cool place for two weeks to macerate. After two weeks time strain the vinegar. Pour into a bottle, cover and use for vinaigrettes. The idea for chamomile vinegar comes from I LOVE NY book, by Daniel Humm and Will Guidara.
