1 cup sauce
1 cup cooked cranberries
1 small piece of ginger
1 hot chilli pepper
½ cup water
salt and pepper
2 tbs fermented vinegar
Hot, sweet and sour, this sauce will be a perfect addition to meats, vegetables, salads and cheeses. Especially well will taste together with fresh cottage cheese. Can be baked with briecheese. I am convinced once you have it you will find many uses.
Rinse the cranberries under running water, put them in a saucepan, add hot chilli pepper and ginger, cover with ½ cup water and cook until the fruit desintegrates, about 10 minutes.Season with salt and pepper and cook a few minutes more. Remove the ginger and most of the chilli pepper, transfer the sauce into the blender and blend until smooth. Sweeten with fermented honey, chill and transfer into the bottle or jar. Keep refrigerated.
