serves 4 people

1 cup chopped green parsley
1 cup mint leaves
½ cup thyme leaves with flowers
½ cup radish leaves with flowers
½ cup tarragon leaves with flowers
1 spring onion, chopped
½ cup pomegranate seeds
1 tablespoon chopped peel salt preserved kumquats and mandarins
¼  cup leaves pansies
¼  cup leaves calendulas

chamomile sauce:
1 tablespoon chamomile apple cider vinegar (from the recipe here)
1 teaspoon fermented honey
salt and pepper
2 tablespoons milk thistle oil or flaxseed oil or mixed

How much power can you find in small flowers and herbs. And this beautiful, delicate salad carries with itself so much power it is hard to believe. The combination of herbs and flowers, springy, light and tasty is bringing with it a lot of health! I have put it together very quickly, just with what I had on hand, but what a combination it makes! There are no incidental here. See for yourself – every each one of the ingredients brings something beneficial for your health: parsley is full of iron, vitamin C has also has diuretic properties. Mint is best for upset stomach, thyme helps the digestion and has antiseptic properties; tarragon is used for digestion support and rheumatism; radish full of minerals and vitamins is an antibiotic and helps the weight loss. Pomegranate is supposed to help in reducing cholesterol and unclogging the blood vessels; pansies  are for skin, acne and also decreases hypertension, has diuretic properties and  helps with body cleansing; calendulas are soothing for the stomach. Orange peel, in my case, from salt-preserved mandarins – lowers blood sugar levels. And this vinaigrette made with chamomile-apple vinegar and honey – chamomile with its soothing properties also helps the digestion. About apple cider vinegar and its beneficial properties plenty has  already been said. Milk thistle oil – for the liver and gallbladder stones or linseed oil – the best source of omega-3 fats. How do they say it: let thy food be thy medicine! And so delicious!
