GRANOLA WITH YOGURT AND BERRIES

serves 4-8 people
1 cup oatmeal
½ cup oat bran
¼ cup chopped almonds
¼ cup quinoa
2 tablespoons sesame seeds (white or black)
2 tablespoons of flaxseeds
pinch of salt
1 tablespoon of fermented honey
1 tablespoon almond
oil or grapeseed oil
250 g of the curd or cottage cheese
1 cup plain yogurt
2 tbs lemon juice

I have not made granola for quite some time, and when I saw similar cheesecakes on Green Kitchen Stories blog, I knew I had to make them. We finally have abundance of berries and stone fruits, so making this breakfast is a must. It is really worth a try! Enjoy!

Berries and stone fruits: apricots, blueberries, strawberries, raspberries, blackberries Mix the dry ingredients: oatmeal and other grains with honey and oil. Season with a little salt and bake at 350F degrees for 15 minutes. Leave in the oven for another 10-15 minutes. Blitz the cottage cheese with yogurt until smooth. Sort, wash the fruit and cut into small, uniform pieces. Put 2 tablespoons of the granola at the bottom of the jar or verrine. On top place 2-3 tablespoons of cheese and yogurt mix. Decoratively arrange the fruit on top of the cheese. Decorate the to with mint and lemon thyme and black sesame seeds.
