1 piece of halloumi cheese cut in 8 slices 1/4 inch
20 strawberries, cut in half
2 cups young spinach leaves
2 cups arugula leaves
½ cup pickled red onion
1 cup sliced fennel
salt and pepper
2 tbs olive oil
reduced balsamic vinegar
This is kinda power food salad. Well, strawberries and spinach belong to that category. Strawberries and salty halloumi are a marriage made in heaven. Halloumi stands to grilling so well, the grilling enhances the saltiness of the cheese making it a perfect foil for fruit, especially late season strawberries. And the strawberry season is coming to the end. Our local strawberries are getting smaller and smaller with the taste being sweeter and sweeter. All of this mixed with the balsamico reduction is an all time classic.
Cut the halloumi cheese in eight slices and grill over the hot grill pan until grilled marks appear on the bottom, turn the halloumi over and grill on the other side. Put aside. While the halloumi is beaing grilled, cut the cleaned strawberries in half. Mix in a bowl the spinach and arugula leaves with the fennel and pickled onion. Season with salt and pepper, mix well and pour over the polive oil. Arrange two slices of grilled halloumi on the plate, add the mixed salad leaves. Arrange the strawberry slices on top and drizzle with balsamic vinegar.
