HERRING WITH APPLE SALAD

8 fillets of herring Matias
1 red
onion, cut into slices
lemon juice
½ cup plain
yogurt
4 tablespoons of cream crème fraiche
1 teaspoon
honey
salt and
pepper
rapeseed oil, or thistle oil
2 red apples
celery root or lemon juice
beetroot leaves
parsley
sesame seeds
Herring is very common in this part of the world. Baltic Sea  breams with this cold water fish. It is usually being salted and this way preserved for longer time. The most popular preparation is just herring, onion, lots of black pepper, some vinegar (ot not for me this time) and oil. It is also quite common to pair the herring with fruit like in the salad here. The salad of herring paired with onion, apple and cream is an everyday staple. Unfortunately,  the salad looks like a colorless blob, even if the taste is exquisite. Pungent, salted herring tamed with winey, sweet taste of apples, paired with slightly sweet sour creamy taste of onions. This salad is a local flavor salad. Herring a staple in all homes. Apples,  probably the best in the world. Ha ha! Onion and cream and wild raspberry fermented honey from the only . I topped it with wonderful cold pressed reapeseed oil, how to call it? Paraphrasing EVOO let it be EVRO!

Put the herring into a bowl and pour cold water all over. Soak for an hour or so to get rid of the excess salt (soaking time depends on the saltiness of the fish). Meanwhile, chop the onion into long thin slices. Transfer to a bowl, sprinkle the onions with lemon juice, season with salt and pepper and leave for the onion to get  softened. Add to the onion yogurt, sour cream and honey. Mix well and put aside. After rinsing and drying herring fillets cut them on the diagonal into 3-4 cm pieces. Put them  in a jar, season them with pepper, sprinkle with oil and leave to the side. Cut the apples into quarters, remove the seeds, and chop the apples into cubes about the size of ½ inch.  Sprinkle apples with lemon juice to prevent discoloration. Cut the celery into slices. Put 2 tablespoons of apple and celery in the middle of the plate. On top, add 2-3 tablespoons of onion in cream. On top of the vegetables arrange the two pieces of herring. Add the beetroot leaves and green parsley. Then sprinkle with some oil and sprinkle with sesame seeds.
