1 cup heavy cream
½ teaspoon of lavender flowers
3 egg yolks
2 tablespoons of birch sugar
zest and juice of one lemon
½ cup of lavender honey
1 cup mascarpone
The idea for me to make the lavender honey ice cream comes from the movie „That’s Complicated”. In one of the scenes, Meryl Streep makes such ice cream for her architect guest. Very inspiring taste for me, as lavender honey is ampong my favorite. Any time I used to go th Provence the lavender honeys was on my purchase list. As it turns out, however, delicious lavender honey can be found in Croatia, especially on the Island Hvar. For the ice cream I used a tiny amount of lavender flowers, brightened thetaste withlemon juice and zest. Yet predominant taste is the lavender honey. Now I am off to maketypically POlish tasting ice cream: salted linden honey.

Boil the cream with lavender flowers. Let stand for about half an hour for cream to get infused with aroma of lavender. In a bowl over a pan of boiling water beat the yolks with birch sugar until they thicken, add cream together with lavender flowers, zest and lemon juice. Cook for five minutes more stirring constanty. Pass the cream through a fine sieve to get rid of impurities so that the sauce to be smooth. Add the lavender honey mixing thoroughly. Put the cream into a flat container or a zip lock bag. Freeze overnight or for at least 2 hours. Chop the frozen cream roughly, put in a blender add mascarpone and mix get a smooth and fluffy mass. Transfer into a container and store in the freezer.
