serves 2 people
2 cups strawberries
1 cup leaves of young nettle
1 cup juice of sea buckthorn
1 tablespoon honey
2 tablespoons chia
2 tablespoons of flaxseed
I was inspired by What Should I Eat For Breakfast Today? blog to make this delicious and healthy smoothie. The combination of strawberries with nettle is divine. Again I was trying to make it with local ingredients only. OK with a small addition of chia seeds. But let me tell you about the nettle which has been one of my favorite herbs for a long time. Nettle is a herb native to northern hemisphere and has a long history of use as a medicine, as a food source and as a source of fibre. Its best known properties are detoxification, it is highly alkaline (after my regular glass of water with lemon I usually have a cup of nettle tisane). It helps cure the arthritis, also supports the work of pancreas thus helping in keeping glycemic levels under control. The most popular preparation is tisane for drinking, but a nettle soup, stuffing for ravioli or just making pesto (with flaxseed oil and sunflower seeds) are popular as well.
Put the strawberries, nettle, sea buckthorn juice and honey into a blender and mix until smooth. Add flaxseed and chia seeds. Let stand for an hour in the fridge for the seeds to soften and get swollen. Pour into glasses and serve chilled.
