TURKEY ROASTED WITH RED BELL PEPPERS AND BALSAMICO

1 turkey leg, about 1,5 lb

salt and pepper

2 garlic cloves

a pinch of hot pepper

 

4 red bell peppers

1 onion

4 leaves of basil

balsamic vinegar

salt and pepper

If you would ask me what is the most popular recipe on the blog I will tell you, it is the roasted turkey thigh. Seems like many of you are searching for an easy yet sophisticated way of cooking delicious meat. Roasting the turkey thigh on the bone results in a very juicy meat. So this time I made some delicious turkey roasted with red bell peppers and balsamic vinegar. The roast resulted to be crispy on the outside and juicy inside, with a distinct sweet and sour taste of peppers and vinegar. Divine. Outstanding dish for any occasion.

Soak the turkey in cold water for about 30 minutes. Remove it from the water, pat dry and season with salt and pepper. Place the meat in the refrigerator and let marinate for 1 hour, preferably overnight. After having removed from the fridge put the meat on the baking dish – I did it in the cast iron pan – skin side up and season with hot paprika and drizzle with olive oil. Add the whole garlic cloves and thyme twigs. Roast in the oven heated to 350F (180C) degrees for about 50 minutes. In the meantime in the same oven roast the red bell peppers until blistered. Cool them down slightly, peel and chop roughly. Peel the onion, cut into thin slices and fry in a tablespoon of olive oil until translucent. Add the peppers and torn basil and smear the mixture over the roasted thigh. Drizzle with balsamic vinegar and roast for another15 minutes.
