ZUCCHINI SOUP WITH GRILLED ZUCCHINI ROULADES

approx. 8 servings
8 cups of water
1 carrot
1 leek
2 stalks celery
1 parsley root
1 spring onion
1 clove of garlic
1 bay leaf
1 sprig of thyme
salt and pepper
1 big green zucchini, grated on a coarse grater
1 big yellow zucchini, grated on a coarse grater
half a cup of mint leaves
grilled zucchini rolls
1 green zucchini 
1 yellow zucchini
salt and pepper
thyme, mint and clove of Garlic, minced

This soup is light, healthy an packed with lots of flavor. Combination of fresh garden vegetables with zucchini and mint is incredible. The yellow and green zucchini used in this soup result in the soup’s beautiful hue. The soup has been blended and was served with green and yellow zucchini rolls that were grilled over the grilling pan for the interesting, grilled, a little smoky flavor. Serve it hot, at room temperature or as a gazpacho. Though, the summer is almost over…. Let us stick to the warm one…

Clean the vegetables and cut them into pieces. Put the vegetables in the pot, pour over the water, add the bay leaf and thyme, season with salt and pepper and cook until the vegetables get soft. Remove the bay leaf, thyme and most carrots dnd add the zucchini grated on a coarse grater. Cook the soup for another 10 minutes until the zucchini is tender. Take off the heat and add the mint.  Blend the soup with a hand held blender. While the soup is cooking prepare  the rolls: Cut the zucchini on the mandolinę into thin slices. Put them into a bowl, season with salt and lightly sprinkle with mint, thyme and Garlic. Leave the zucchini  for about half an hour to soften. Put on a slice of green and yellow zucchini on top of the other and roll up into a tight roll. Repeat with the remaining slices. Secure with  bamboo sticks or toothpicks. Grill them on a pan, over medium heat for 1 minute on each side. The soup may be served  warm, at room temperature or cold. Pour the soup into the bowls, put two or three grilled rolls in the middle, pour over some oil and decorate with some herbs.
